Side Dishes for Baked Chicken at Wedding?

My daughter is serving baked chicken at her wedding reception and we're wondering what are some good side dishes. We're both picky eaters but we both want everyone to enjoy the food and have a good variety without overdoing it. Also, any tips for wedding favors?

I think something like mac&cheese, stuffing, rice casserole etc would be good. Those items that taste better the next day so they can be prepared ahead of time.

I would use scalloped potatoes or stuffing.
Cranberry sauce is a good condiment.
Fresh or frozen (probably easier and you can get little whole ones) beans or frozen peas would be easy.
Some type of rolls or muffins.
Salad (perhaps some jello salad and a toss if you are having it as a buffet, otherwise a toss).

I just went to a school soccer banquet this week and they had a buffet. They served roast chicken pieces, fried catfish (Oh, was that ever good). For 'sides' they had green salad, fresh fruit salad, au gratin potatoes (they were a bit dry), and small roasted white potatoes in butter and herbs (they were especially good and probably roasted at the same time as the chicken), corn nib lets and green beans (very plain and a bit tasteless).

Overall it was very nice...oh yeah, and rolls. Good luck.

Assuming you're going to use buffet style:

Half ears of corn, kept warm in a crockpot
Gravy (also, warm in a small crockpot)
Salad (serve dry, have dressings available)
dinner rolls
Mac/cheese casserole
cranberry compote
cole slaw
veggies and dip tray
cheese tray

Most of the above can be prepped ahead of time and served room temperature

Sea shells with marinara sauce, tossed salad, rolls with butter pats, and a side veggie. YUM.

Rice pilaf and steamed local vegetables. Wedding favors-single beautiful floor tiles with a smaller square mirror over it. Scatter polished pebbles or clear or coloredglass pebbles. Small glass bowls with a scented candle or a real or silk flower.

Make a mixture of wild & white rice, with finely diced green peppers & onions with sliced mushrooms. Severed with whole green beans with a mushroom sauce on the side. To add color yellow squash with carrots, or peel and cut in half a sweet potatoe. Then use a small knife to cut each half like the rose radishes.

Season and bake adding a pineapple & orange sauce as a topping. Do the flacky rolls open one of the layers and add soften cream cheese, and add parmesan cheese on top, (make extra people love them.) I hope this helps!
